Custard cream, is the basic ingredient for French desserts and sweet pies, featuring a sweet flavor.

This sauce is mainly made from egg yolks, milk, low-gluten flour, fine sugar and corn starch. It often contains additional ingredients such as vanilla extract. It is prepared by mixing the egg yolk mixture, boiling the milk, and heating them together through processes such as stirring the egg yolk paste and boiling the milk. It becomes semi-fluid and viscous. It can be frozen and kept for up to one month. Its uses include filling for puffs, filling for bread, and decoration for cakes. It can also be mixed with light cream or cheese to create derivative sauces. During the production process, it needs to be heated over low heat throughout and stirred continuously to avoid burning the bottom or forming lumps.
