Tapioca Pearls-Natural Colors' Application
Tapioca Pearls: Natural Colorants Can Be Safely Used in Rice and Flour Products — The main ingredients of tapioca pearls are tapioca starch, water, and white sugar. In milk tea or sweet soups, tapioca pearls usually appear as small add-ons.

Production Process:
1. Add the colorant, boiling water, and white sugar to a pot in order, and stir until completely dissolved and evenly mixed;
2. Heat the mixture from step 1 over low heat, gradually add tapioca starch a little at a time while stirring (reserve about 2-3g of tapioca starch for later use);
3. When the mixture reaches a semi-solid state, take it out and knead until uniform into a dough (sprinkle with tapioca starch to prevent sticking), then shape into small pieces;
4. Add the prepared tapioca pearls into boiling water and cook over medium-low heat until the centers of the pearls turn translucent, then cool in cold water before draining and packaging for storage.
