Popping boba - Natural Colors' Application
Popping boba is similar to the pearls in bubble tea, but the difference is that when you bite into popping boba, liquid bursts out from inside, providing a novel experience. The sudden explosion of juice is simply a source of joy.
The principle behind making popping boba is that the calcium ions in calcium lactate react with water-soluble sodium alginate, forming cross-links between large molecules, which creates a gel layer. This is how the popping boba we see is formed.
1. Prepare Material 1: Weigh out granulated sugar, sodium alginate, citric acid, sodium citrate, water, potassium sorbate, and natural colorants, put them into a beaker, and stir well until completely dissolved.
2. Prepare Material 2: Weigh out calcium lactate, water, and potassium sorbate, put them into another beaker, and stir well until completely dissolved.
3. Use a dropper to add Material 1 into Material 2, quickly remove the caviar pearls, and store them in pure water.
Popping boba come in a variety of colors and flavors. They are widely used in bubble tea shops, restaurants, ice cream parlors, juice bars, and fast food chains. They can easily be incorporated into drinks, desserts, and baked goods.
